Who the crates go to.

Our deck oven supplies the street outside and three independent kitchens across our neighborhood. Every week, wooden crates travel by cargo bike to our closest community partners.

Café Lune: Morning Baguettes for the Neighbourhood

Café Lune sits just three streets away and has partnered with Mugi Bakehouse since our opening year in 2019. Every morning from Tuesday through Sunday, Hugo loads eighteen freshly baked baguettes onto the cargo bike at 12:30, or earlier for their morning service. The café slices each baguette fresh for breakfast tartines with salted butter and alongside bowls of coffee. Because our baguettes are fermented with natural levain and stoneground wheat flour from Molen Ter Beke, they stay crisp on the table while holding a tender, aerated crumb. Seeing our crates stacked on their wooden service counter reminds us why we bake for the immediate street outside.

Westpark Primary Kitchen: Spelt Tins for School Lunch

The kitchen team at Westpark Primary school cooks warm, nourishing lunches every day of term for hundreds of children. We deliver twelve Seeded Spelt Tins each weekday morning from Monday to Friday during term time. Because the school kitchen begins early food preparation, their tins are baked and packed into crates the afternoon before by Priya. Sliced thick on large timber boards, the spelt loaves provide sustained energy thanks to whole grain flour from Haverveld farm and toasted sesame seeds. Tomasz and Ines worked closely with the school cooks to ensure the bread is naturally nutritious, free of additives, and easy for young hands to hold.

Okafor Grocer: Fresh Rye and Sourdough on Market Days

Okafor Grocer is an independent corner grocery known for seasonal vegetables, regional dairy, and pantry staples. Twice a week, on Tuesday and Friday mornings, Hugo bikes over eight Dark Rye loaves and six Country Sourdough boules in sturdy wooden crates. Mr. Okafor arranges the crusty loaves directly on wooden display shelves beside brassicas and root vegetables. The dark rye, milled from Lindenhof grain 38 km away, and the country sourdough, fermented with our 2019 levain, stay fresh across several days. Regular neighbourhood shoppers know to visit before midday on delivery days, as both loaves reliably sell out before the afternoon.
